INSTRUCTIONS AND PRIMARY CARE TO OBTAIN A GOOD QUALITY IN COD CONFECTION

The dried cod should not remain in an environment with a temperature higher than 18ÂșC.
HOW TO DEMOLVE:
Let the water run for two to three seconds to mirror the water's chlorine, then put some ice in the container where the codfish will be soaked that the water is fresh - the water temperature should be about 7oC.
The time for the cod to be demolished varies according to the thickness of the cod:
- 3 days - up to 72 hours, for codfish weighing more than 2Kg;
- 2 days - up to 48 hours, for codfish weighing less than 2Kg.
The water must be changed every 8 hours, not forgetting to put ice to achieve the ideal temperature of demolition. For the shredded cod, we should put the crumbs in a strainer and leave it in cold running water for 20 minutes.
After soaked, the codfish will be ready to be cooked or it can be frozen by putting it on a clean cloth to remove the excess water.
